Step 1
Boil shrimp until pink, then peel and devein.
Step 2
Cook rice vermicelli according to package instructions.
Step 3
Dip rice paper in warm water to soften, then place on a damp cloth.
Step 4
Layer lettuce, mint leaves, rice vermicelli, and shrimp on the lower half.
Step 5
Roll tightly, folding in the sides, to form spring rolls.
